Yogurt Still Good?

I made a batch of homemade goat yogurt out of pasteurized goat milk. I put it in my dehydrator and set the timer for 26 hours (was supposed to take it off at 1:30 am). I didn't get up until 5:00 am. The yogurt was still warm so I put it in he refrigerator. Is it okay to eat?

Hi Wynona,

My yogurt is always warm when I finally put it in the fridge. I've never had a problem with it. I think the longer it incubates, the tangier the taste gets, but the good lacto-bacteria in it keep other things from growing, especially when it was just cultured and still high in good-bacteria count. You only have a 3-1/2 hour difference, and I'd eat it!
