Crustless Spinach Quiche

Serves 6


1 (10-ounce) package frozen chopped spinach, thawed and drained
1 cup shredded part-skim mozzarella cheese
4 eggs PLUS
2 egg whites, lightly beaten, or 1 1/4 cups egg substitute
1 tablespoon grated onion
1/4 teaspoon nutmeg

1. Preheat oven to 350°F.

2. Mix all ingredients and transfer to an 8-inch pie plate coated with nonstick cooking spray.

3. Bake 30 minutes or until knife inserted in center comes out clean. Serve hot or cold.
