Fiesta Salad

Serves 6

Ingredients:

3 large avocados
1/2 cup sour cream
3 tablespoons lemon juice
1 tablespoon chopped purple onion
1 tablespoon water
1/4 teaspoon salt
1/4 teaspoon Tabasco hot pepper sauce
1 head lettuce
1 large tomato, chopped
1 cup Cheddar cheese, , shredded
1/4 cup sliced olives
1 cup , broken tortilla chip

Mash 1 avocado. Put sour cream, lemon juice, onion, water, salt and Tabasco in a blender or food processor. Add avocado and process until smooth. Break lettuce into bite-size pieces and place in serving bowl. Slice other two avocados and arrange on lettuce. Add tomato, cheese and olives. Just before serving. Toss lightly with dressing and chips.
