Cook'n without Alcohol

In a lot of recipes it calls for alcohol of some type. Can you tell me (or refer me to a place that will tell me) what I can do to replace alcohol in a recipe. I understand that it will change the end flavor, that generally the alcohol cooks out, etc; but I would rather not use it.

Hi Bruce,

I'm with you! I do not want to cook with alcohol. A few years ago I wrote up an article on this for the Cook'n newsletter. I was surprised to find in my research that very little of the alcohol cooks out... even after hours of cooking.
