Pork Substitution?

Please let me know if the pork used in the Chile Verde Con Puerco recipe uses either fresh or smoked pork and if any other cuts can be used.

Hi Tom,

Yes, you can use other types of pork. The great thing about authentic cooking is that cooks used whatever they could get their hands on. . . fresh, smoked, roasts, chops, ribs, etc. I still do that today. This recipe is fit for that . . . tenderizing even the toughest cuts of meat. While I assume that a fresh pork roast would work best, you could still use smoked pork if that is what is available. It should add a nice flavor.
