Ham-Filled Crepes

Serves 4

Ingredients:

2 cups finely chopped cooked ham
2 hard cooked eggs , finely chopped
1/4 cup chopped ripe olives
2 teaspoons sweet pickle relish
3/4 cup mayonnaise
8 crepes (see below)
8 slices Swiss cheese

1. Combine ham, eggs, olives, relish, and mayonnaise.
2. Divide among crepes roll up.
3. Place in shallow baking pan with 1 slice cheese on each crepe.
4. Broil until cheese melts.


Basic Crepes

2 cup all-purpose flour
4 eggs
1 cup milk
1 cup water
1/2 teaspoon salt
4 tablespoons butter, melted

Directions

In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
