USDA canning recipes call for a heat stable cornstarch called Clear-Jel A. It is a modified type of cornstarch. Using regular cornstarch is not harmful
in these recipes, you just won't win any blue ribbons at the county fair. Regular cornstarch doesn't hold up in the processing. The pie filling consistency breaks down in the jar, creating a more liquid, less viscous product.
