I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. I love that and just wanted you to know how much we appreciate all your hard work in putting together this newsletter. Thank you very much.

Pineapple Chicken

Serves: 4

4 boneless, skinless chicken breasts
1/2 pound bacon
1 can pineapple slices
1 avocado, sliced
1 tomato, sliced

Wrap boneless skinless chicken breasts in a strip of bacon, grill on the BBQ until cooked through (around 20 minutes cook time). Get pineapple rounds in a can (or fresh) and throw on the grill.

Once cooked place chicken on plate and place a slice of grilled pineapple on top and alternate tomato and avocado on top of that.

Serve with white rice and steamed broccoli.
