Hot Cooked Rice

2 cups white rice
4 cups water
Dash salt


I don't measure rice or water...The old Cajun way is to put the rice in the pot you will cook it in, and stick your thumb in pointing down. When the tip of your thumb touches the rice and the water comes to the middle line of your knuckle crease, you have just enough water! Works every time, in every pot.

Put the pot on and bring it to a boil, put on a tight-fitting lid and turn off the burner. 20 minutes later...perfect rice! Fluff with a fork.
