Cranberry Cookies

These cranberry cookies may be best served as a fall or winter treat, but after you've tried them, you'll be baking them all year round. Follow the recipe once, then move on to customizing the cookies with your own original touches.

Ingredients:
1 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups semisweet chocolate chips
1 1/2 cups dried cranberries
3/4 cup chopped pecans
1/2 cup English toffee bits or almond brickle chips, optional

Directions:
Preheat the oven to 350°F. In a large bowl, cream together the butter and sugar. Add the eggs and vanilla and mix the ingredients well. In a separate small bowl, combine the flour, baking powder and salt, then gradually add the dry mixture to the creamed mixture and mix well. Stir in the chocolate chips, cranberries, pecans and toffee bits (if you're using them), then mix everything together (the dough will be stiff).

Drop rounded tablespoonfuls of the cookie dough onto ungreased baking sheets, 2 inches apart. Flatten each cookie ball slightly, then bake the cookies for 11 to 14 minutes, or until they've set and the edges are lightly browned. Let the cookies cool on the baking sheets for two minutes before removing them to wire racks to cool completely.
