High Protein Dinner in a Flash!

This month trending on Pinterest I found an amazing high protein dinner!

If you’re busy running kids between school and sports practice, or if you don’t feel too confident in the kitchen, then ancho chicken tacos is the recipe for you! It’s such an easy and quick, but delicious dinner. It truly takes 20 minutes. It’s warm, full of protein (read: meat!) and looks pretty too!


The first time I made these, I was in a cooking rut and just looking for something fresh and good to serve! I had eaten one too many frozen meals, and my husband and I were craving some REAL food! This recipe brought us right back up. It’s a high protein meal, and comes together quickly. Follow me through the recipe and then try it on your own at home!

This recipe makes about 12 small tacos. So prepare more or less as need be. First, combine the shredded cabbage and a full bunch of cilantro. The way I see it, the more cilantro the better! In another bowl, mix together the flour, ancho chili powder, taco seasoning, and salt and pepper. Cut your chicken into bite size pieces and toss in that flour mixture. Then cook it in hot oil on the stove, until browned and cooked through. Take off the heat, give it another dash of salt and let it rest before shredding.


Warming the tortillas makes the dish for me, so heat small corn tortillas in the microwave for 30 seconds or on the stove. Then assemble your tacos with meat and toppings: Cabbage, cilantro, sour cream, avocado, lime wedges, minced red onions, and jalapenos if you like them!
