Maple Nut Rolls

   _ cups powdered sugar unsifted
   _ 7-ounce jar marshmallow creme
   ___ cup creamy peanut butter
   _ tablespoons maple extract maple extract
   _ tablespoon half and half or milk
   _ 14-ounce package caramel candy
   _ tablespoons water
   _ cups peanuts chopped dry roasted


* The maple or caramel centers can be made the night before and frozen, then complete the recipe the next day. A special do-ahead food gift. In a large bowl, mix powdered sugar, marshmallow creme, peanut butter, maple extract and half-and-half with a rubber scraper until partially blended. Transfer to a board and knead until smooth. Divide into eight equal portions and form each into a 4-inch roll. Wrap each roll in plastic wrap and freeze for 4 hours or until firm.

In a 1-quart saucepan over low heat, melt caramels in water, stirring until well blended.

Place nuts in a pie plate. Unwrap the frozen rolls. Using two forks, quickly dip one roll at a time into the caramel mixture; roll in nuts. Place on waxed paper. Chill for 1 hour. Wrap in plastic wrap and store in a cool dry place, or wrap in plastic, then foil and store in the refrigerator up to 1 month.

Peanut Caramel Rolls: Delete maple extract, increase half-and-half to 3 tablespoons and add 1 teaspoon vanilla extract to the powdered sugar mixture. Prepare as above.

Wrap in cellophane and tie ends with ribbon like a firecracker. Tuck in small sprigs of pine and attach a jingle bell. Or, wrap and place on a small cutting board or oblong candy dish. Tie with a ribbon.
