 1 cup yellow cornmeal
 1/2 teaspoon baking soda
 3/4 teaspoon salt
 1 onion small, finely chopped
 1 clove garlic chopped
 1 cup cream style corn canned
 3 eggs
 1/4 cup vegetable oil or bacon drippings
 1 cup sour cream
 2 green chilies canned, seeded and minced
 1 cup cheddar cheese grated
 
 
 Mix corn meal, soda, salt, onion, garlic, corn, eggs, bacon drippings or oil, sour cream and chili peppers. Beat well. Spread 1/2 of the mixture in buttered 10-inch iron skillet or a 10-inch round baking pan. Sprinkle the cheese over the batter. Cover with remaining batter. Bake for 45 minutes at 350° until browned. Serve hot with butter.
 
 Note: This may be made ahead of time and reheated, wrapped in foil. It also takes well to freezing.
