Outback's Salted Caramel Skillet Cookie- A Dessert My Husband and I Can Agree On!


It’s happened. Finally- after over 9 years of marriage, it’s happened. My husband and I have found a dessert that we both LOVE.

We have very different tastes when it comes to sweets. My husband loves chocolate cakes, brownies and fruity desserts like apple pies and strawberry ice cream. For me, I love creme brulee, cheesecakes, puddings, oreo ice cream, and anything drenched in caramel! When we want to make or pick up a dessert, it’s hard to find something we’re both craving! It’s usually one of us settling for the other person’s favorite, or more often than not I just decide not to get dessert because I’d rather save the money and calories if I can’t split it with someone.

Well, that’s all changed- because we finally discovered a dessert that we BOTH look forward to. Outback’s Salted Caramel Cookie Skillet.

My husband took his team out to lunch for a meeting, and on a whim he decided to branch out and try this salted caramel cookie for dessert. He loves skillet cookies, so he thought he may as well give this a shot. He came home and raved about it! He said it might be his new favorite dessert and that I needed to try it asap because it has all the things I love- caramel, ice cream, toffee, white chocolate- literally all my favorites!

But… we have 5 children. One of which is a very clingy 8 month old. So getting out of the house is a feat in and of itself, let alone to a nice sit-down restaurant. We decided to take matters into our own hands and try and make one ourselves.

We definitely had success! This cookie is a new favorite, and one that’s here to stay. White chocolate chips, toffee chunks, a warm buttery cookie, covered in ice cream and caramel and chunks of sea salt- it’s just too good. And it’s something my husband and I can enjoy together, which makes it even tastier in my eyes!

We adapted the recipe somewhat from a different source. We’ve made it a few times in the past few weeks, and while the original outback cookie has pretzel pieces in it, I actually think I like it better without them. I also add a good shake or two of coarse sea salt- because why would you not???

This recipe makes a BIG cookie. We cook it in our 10 inch skillet, and it’s definitely too big for the two of us. You could split it into smaller skillets and adjust the cooking time, or share it with kiddos- or just go crazy on date night! Either way, this is definitely a keeper in our house and I’m sure it will be in yours too!

Outback's Salted Caramel Skillet Cookie

A rich and delicous dessert! You can add in a 1/4 cup of pretzels if desired, but it's definitely not needed!

Yield: 1 large cookie

Serving size: 4
Calories per serving: 422

Ingredients:
1/2 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons butter, room temperature
3 tablespoons sugar
3 tablespoons brown sugar
1 medium egg (or 1/2 a large)
1 teaspoon vanilla extract
1/3 cup white chocolate chips (heaping!)
1/3 cup chopped English toffee (heaping! I used Heath's Bit o' Brickle)
3 scoops vanilla ice cream
drizzle of salted caramel ice cream topping
sea, sprinkling of coarse salt


Directions:
Preheat oven to 350 degrees. Whisk together flour, baking soda and salt and set aside. Cream butter and sugars together in a separate bowl (you can just do it by hand with a fork). Add egg and vanilla and mix well. Gradually add dry ingredients and combine with wet ingredients. Stir in white chocolate chips and toffee chips (and pretzels if desired). If using a 10 inch skillet, bake for 20-25 minutes, or until middle is done (no longer glistening on the top). Bake time will vary with size of skillet you use.

Let cool for 3-5 minutes, then top with ice cream, salted caramel sauce, and sea salt to taste.
