Homemade Yellow Butter Cake with Buttercream Frosting


I love dessert. More than I should ;). But much to my husband’s disbelief and disappointment, I’m really not a cake person. When birthdays roll around, I usually just pass on the cake (but have maybe more ice cream than I should!). However, there are a couple exceptions, and one of those is my mom’s Yellow Butter Cake. I mean, it has butter in the title, so you know it’s got to be good, right?

One of the earliest memories I have of this recipe is biting into my mom’s “color” cake. When she’d make this recipe for birthdays, she would separate some of the batter and add different food coloring to each bowl, so we often had rainbow colored cakes. I remember one birthday in particular where we had red and blue cake. I think of that memory of biting into a dense, rich, red and blue colored cake and I think of my mom and how much I loved her cooking. I can’t eat this cake and not think of her! This cake recipe is my go-to for birthdays now- and I just had to share it with all of you!

This cake is dense, moist, and quite delicious! One of the reasons I’m not always a fan of cake is because it’s just too dry, and I’ve never had that problem with this cake- it’s simply scrumptious! I also love that it uses almond extract, because almond baked goods are just always a good thing. Especially when paired with frosting that has almond extract- a match made in heaven!

I love to pair my homemade butter cake with this homemade buttercream frosting. The almond extract says it’s optional in the recipe, but come on, not really ;). You’ve got to have the almond extract! The recipe also only calls for a couple tablespoons of milk, but I always end up adding a lot more than that.

This is my favorite homemade cake recipe in the whole world, and I’m sure a lot of that has to do with the fact that when I take a bite, I think of my childhood and my mom. Do you have a favorite cake recipe that reminds you of your childhood! I’d love to hear all about it!
