Greek Pork Chops

These pork chops came out absolutely delicious.

Dovetailing tip: Double the recipe. Set aside leftovers to make Street Tacos for Meal 4.

Ingredients:

2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon pepper
1/2 teaspoon ground mustard
4 boneless pork loin chops (3/4 inch thick and 4 ounces each)

Directions:

In a large resealable plastic bag, mix first nine ingredients. Add pork chops; seal bag and turn to coat. Refrigerate 8 hours or overnight. Drain pork, discarding marinade. Grill chops, covered, over medium heat or broil 4 in. from heat until a thermometer reads 145°, 4-5 minutes per side. Let stand 5 minutes before serving. Freeze option: Freeze chops with marinade in a resealable plastic freezer bag. To use, thaw in refrigerator overnight. Drain pork, discarding marinade. Grill as directed. Yield: 4 servings.
