Creamy Pumpkin Soup

Nothing says Autumn better than a bowl of steamy, creamy pumpkin soup. Yum!

Dovetailing Tip: When preparing the pumpkin purchase at least a 4 pound pumpkin. Cube 2 cups into 1" cubes. Save these cubes to use in Black Bean n' Pumpkin Chili for Meal 5.

Ingredients:

2 pounds pumpkins (any), chopped into large chunks (remove skin and seeds) (note 1)
2 medium onions, sliced
2 cloves garlic
3 cups chicken or vegetable stock
1 cup half and half
sea salt, to taste
freshly ground black pepper, to taste

Directions:

Combine all ingredients (except half and half, salt and pepper) in a saucepan and bring to boil, then reduce heat and let simmer until pumpkin is tender.

Remove from heat and use a stick blender, or blender, to blend until smooth. Return to heat and stir in half and half. Heat gently; do not boil.

Season to taste with salt and pepper, then serve with crusty bread.

Garnishes: Dollop of yogurt, sour cream or creme fraiche goes wonderfully.
