Berry Salad with Chicken and Feta


With leftover chicken in the fridge, I can throw this quick salad together in no time. The berries give it a fresh summer taste.

Ingredients:

organic salad greens of choice (I used baby lettuces)
avocado, 1/4 per person, diced
yellow bell pepper, diced
cucumber, diced
crisp apple, diced (1/4 per person)
raspberries
blueberries
strawberries
cooked chicken, diced or shredded
feta cheese
chopped hazelnut
sea salt
freshly ground black pepper
raspberry vinaigrette

Directions:

For each salad, add greens to place. Sprinkle with remaining ingredients, to taste. Pass the raspberry vinaigrette.
