No Bake Chocolate Cookie Dough

High protein, high fiber garbanzo beans work as this cookie dough’s base.  Blended up with a bit of nut butter, you have a super healthy dessert that you don’t even need to cook!

Ingredients:

1 (15-ounce) can garbanzo beans
1/3 cup almond or peanut butter
2 to 4 tablespoons milk
1/4 teaspoon salt
3 teaspoons vanilla extract
1/8 cup granulated stevia or 1/4 cup honey
1/2 cup chocolate chips
1/4 cup chopped nuts, optional

Directions:

1. Place all ingredients, excluding chocolate chips and optional nut pieces, in a food processor.  Blend until very smooth (approximately 3 minutes), scraping the sides after each minute.
2. Once mixture is completely smooth, place into a big mixing bowl.
3. Stir in chocolate chips and nuts, if using.
4. Place dough into refrigerator for 1 hour.
5. Transfer into individual cups or a small bowl for serving.
6. Serve with sliced fruit or plain with little spoons.
