Crisp Corn Bread Salad

No time to refrigerate? It is still great when made and served immediately.

Ingredients:

1 cup coarsely crumbled corn bread
1 (8 3/4-ounce) can whole kernel corn, drained
1/2 cup chopped onion
1/2 cup chopped cucumber
1/2 cup chopped broccoli
1/2 cup chopped green pepper
1/2 cup chopped sweet red bell pepper
1/2 cup chopped, seeded tomato
1/2 cup peppercorn ranch salad dressing
salt and pepper, to taste
leaf lettuce , optional

Directions:

In a large bowl, combine the corn bread, vegetables, salad dressing, salt and pepper. Cover and refrigerate for 4 hours. Serve on a lettuce-lined plate if desired. Yield: 6 servings.
