Green Fluff

While this can be served as a dessert, it also goes great as a side. And it's just in time for spring! As you can see it's got that beautiful pastel color, plus... it's tasty. Use cottage cheese and it's nutritional, too! Is it too good to be true? Nope, it's just that good.

So good, that you don't just have to have it in the spring. We have it every year at our Thanksgiving, too!


Green Fluff (a.k.a. Lime Pear jello)


Ingredients:
1 (29-ounce) can pear
water
1 box (large) lime jello
8 ounces cream cheese (or cottage cheese for a healthier option)
8 ounces whipped topping (or more if desired)


Directions:
Drain pears, but reserve juice. Set pears aside. Add enough water to juice to equal two cups. Bring to a boil. Remove from heat. Add one large box of lime jello. Stir until dissolved. Puree pears in processor. Add one 8 oz. block of softened cream cheese. (cottage cheese can be used instead for healthier option). Puree again. Pour in hot lime jello. Continue to puree until smooth and well incorporated. Pour into a bowl and let it set in the fridge. Whisk 8 oz. whipped topping. Let set again. If desired, top with more whipped topping.
