Avocado Chocolate Pudding... Easy

By Sydney Hill

The title didn't need anything fancy. It speaks for itself. What a novel idea! I literally just made this about 10 minutes ago, and I was actually impressed. There was a slight avocado aftertaste (but the avocados I used had that, too, so I don't know how it would taste with a really good avocado). However, I did add about 1/2 cup of brown sugar (hee hee) and the aftertaste seemed to go away, or at least wasn't as strong. Other than that it truly tasted like chocolate pudding! Someone suggested it would taste good with ice cream, too. I could see that.

Avocado Chocolate Pudding

Ingredients:
2 avocados (ripe, medium)
1/3 cup baking cocoa
1/2 cup milk
1/4 cup honey (I used white sugar instead)
1 1/2 teaspoons vanilla extract

Directions:
Mash avocado very well. Mix ingredients together.

This was a superfast recipe and a good way to use avocados. I love feeling a little less guilty eating my dessert!
