Broiled Open-Face Vegetarian Sandwich

Serves 1

Ingredients:

2 slices Italian bread, 1 inch thick
2 teaspoons reduced-fat margarine
2 slices tomatoes
2 slices zucchini
2 slices onions
2 slices green peppers
garlic powder (to taste)
basil (to taste)
pepper (to taste)
2 ounces shredded part-skim mozzarella cheese

1. Spread bread with 1 tsp margarine on each piece.

2. Top with tomato, zucchini, onion, and green pepper slices.

3. Sprinkle with garlic powder, basil, and pepper top with cheese.

4. Broil until browned on edges and cheese is melted.
