I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Impossibly Easy Pizza Pie

Serves: 6


           Download this recipe.

1 medium onion, chopped (1/2 cup)
1/3 cup grated Parmesan cheese
1/2 cup Original Bisquick®
1 cup milk
2 eggs
1 (8-ounce) can pizza sauce
1/2 (3-ounce) package sliced pepperoni
1/4 cup chopped green bell peppers
3/4 cup shredded mozzarella cheese (3 ounces)


1. Heat oven to 400°. Grease pie plate, 9 x 1 1/4 inches. Sprinkle onion and Parmesan cheese in pie plate.

2. Stir Bisquick, milk and eggs until blended. Pour into pie plate.

3. Bake 20 minutes. Spread with pizza sauce; top with remaining ingredients. Bake 10 to 15 minutes or until cheese is light brown. Let stand 5 minutes before serving. Sprinkle with additional Parmesan cheese if desired.

BETTY'S TIP: Doubling any Impossibly Easy Pie recipe is a breeze. Just double the ingredients, and bake in either two pie plates, 9 x 1 1/4 inches each, or in a 13 x 9 x 2-inch baking dish. If you use the baking dish, bake the pie for 10 minutes longer than the recipe indicates.
