I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Tomato Salad Platter

Serves: 4


        

  Download this recipe.

1 tablespoon basil chopped fresh leaves*
1 tablespoon vegetable oil
1 teaspoon cider vinegar
1/4 teaspoon garlic minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Pinch sugar
2 tomatoes medium, sliced 1/4 -inch thick
1 tablespoon green onions thinly sliced


In a small bowl, mix basil, oil, vinegar, garlic, salt, pepper, and sugar. Let stand 30 minutes to blend flavors.

In a glass baking dish or pie plate, arrange a single layer of tomatoes. Drizzle with half of the dressing; sprinkle with half of the green onion. Repeat. Cover and chill 15 minutes.

To serve, transfer to a serving plate. Garnish with salad greens or parsley sprigs if desired. Serve slightly chilled.

*If using dried, use 1 teaspoon or to taste.
