I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Dinner in a Pumpkin

Ingredients: (Serves 6)

  • 1 small to medium size pumpkin
  • 1 onion, chopped
  • 2 Tbs. vegetable oil
  • 1 1/2 to 2 pounds ground beef
  • 1 1/2 cup cooked rice
  • 2 Tbs. soy sauce
  • 2 Tbs. brown sugar
  • 1 (4 oz) can mushrooms, drained
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1 (8oz) can sliced water chestnuts

  1. Cut top of pumpkin off and clean
  2. Make face on pumpkin with permanent marker
  3. Saute onion in oil, add meat and brown
  4. Drain grease.
  5. Add soy sauce, brown sugar, mushrooms and soup
  6. Simmer 10 minutes, stirring occasionally
  7. Add rice and chestnuts
  8. Spoon into pumpkin and add "lid"
  9. Place pumpkin on cookie sheet and bake at 350 degrees for one hour
  10. Use scooped out pumpkin as squash
