Best Ever Cookie in A Mug

Have you seen the cookie in a mug recipes floating around the internet for years? I have tried a few of them and been consistently underwhelmed. They were just not close enough to a real cookie that I even enjoyed them. Too crumbly, too soggy, or too salty.

But when went to Pinterest and saw my very favorite food blogger Mel release her version of a chocolate chip cookie in a mug, I knew I had to give the mug method another shot. And the best news of all? It is only a few ingredients and takes about a minute to make. Winning all around. Thanks, Pinterest!


Chocolate Chip Mug Cookie

You are only a minute or so away from a delicious, chocolate chip mug cookie made start-to-finish in a mug and "baked" in the microwave!

Ingredients:
1 tablespoon melted butter or coconut oils
1 tablespoon granulated sugar
1 tablespoon brown sugar
pinch of salt
1 egg yolk
1/4 cup all-purpose flour
2 tablespoons chocolate chips (regular size or mini)


Directions:
Very lightly coat the inside of a 6- or 8-ounce mug or ramekin with a smidgeon of cooking spray, butter or coconut oil. Mix all the ingredients together in the mug (to avoid the batter being crumbly, mix the butter, egg yolk, sugars and salt first before gradually stirring in the flour and adding the chocolate chips).

Microwave for one minute at 80% power (I have a 1,000 watt microwave; if your microwave has more or less watts, you may need to adjust the time a bit). The top will look light and yellow and may even seem undercooked but if you gently press the top and it lightly springs back, it's perfect (don't overcook or it will be dry and tough in spots).

Serve warm with a scoop of vanilla ice cream, if desired.

As always, I like to get out all my ingredients before starting, to make sure I have everything on hand. For this recipe you’ll need:

Start by spraying your mug (or ramekin) with cooking spray. Mix your first 5 ingredients together first, then gradually add the flour and chocolate chips. Following this order will help your dough not be crumbly.

Learning to use your microwave power adjustment feature is an important skill in the kitchen! Cook this mug of dough at 80% power (this is for a 1,000 watt microwave) for one minute. This will leave your cookie undercooked to perfection!

An idea for if you’re making more than one mug at a time, is to just whisk a whole egg and split it between the two cups!


I agree with Mel, these mug cookies are the perfect match for a scoop of your favorite ice cream right on top. You already have the mug ready to hold it, and the melty ice cream into the underbaked cookie IS perfection! I’d call this recipe a Pinterest win!
