Pistachio Shamrock Cookies


This recipe was always my favorite St. Patrick's Day treat as a child. I still absolutely love these cookies. They are so fast and easy to make. I am positive they will be a new family favorite at your house as well. Happy St. Patrick's Day!

Ingredients:
1/4 cup butter (softened)
3 1/2 ounces instant pistachio pudding
1 1/3 cups Original Bisquick®
1 egg
1 tablespoon sugar
powdered sugar
milk
green food coloring


Directions:
Preheat oven to 350 degrees.

Cream together butter and pistachio pudding.

Blend in Bisquick, egg, and sugar until well mixed.

Roll out dough on a lightly floured surface to 3/8 inches thick; cut with a shamrock cookie cutter.

Place on a lightly greased cookie sheet.

Bake for 9-10 minutes or until lightly browned on the edges.

Cool on wire racks.

Mix a little milk with some powdered sugar until desired consistency. Color with green food coloring.

Frost your cookies and enjoy!
