Candy Bar Caramels

Makes: 25 pieces



from Jean Price

1 1/2 cups coarsely chopped pecans
1 cup chocolate chips
2 cups brown sugar
1 cup butter
1 cup light corn syrup
1/4 cup water
1 (5 oz) can sweetened condensed milk
2 teaspoons vanilla

Line an 8 1/2 x 11-inch cake pan with foil; butter lightly. Sprinkle the pecans & chocolate chips evenly over the foil. In a heavy saucepan, combine the brown sugar, butter, corn syrup & water; bring to a boil; add the sweetened condensed milk; cook to the firm-ball stage (248 F.) Stir in vanilla and pour over the chips & nuts. Allow to cool. Cut into squares.
