Creamy Tomato Soup

Serves: 4

1 onion minced
1 (28-ounce) can whole peeled tomato
2 (14.5-ounce) cans chicken broth (about 3 1/2 cups)
1 cup heavy cream
1 tablespoon minced garlic
1 tablespoon dried thyme
1 teaspoon salt
freshly ground black pepper


1. Mince the onion.
2. Purée the tomatoes in a blender or a food processor and transfer to a large pot over medium-low heat.
3. Stir the remaining ingredients into the pot and blend well. Simmer for 45 minutes or until the onions are soft.
4. Serve with some freshly ground black pepper.
