For many of us, nothing is more refreshing and satisfying than a simple smoothie made with fruit juice and fruit. However, if you haven't yet sampled a smoothie made with milk or yogurt, you're in for a real treat because these dairy ingredients endow a smoothie with a creamier texture and a richer taste. Just as important, this combination of ingredients allows you to reap the health benefits of both fruit and dairy, each vital components of the food pyramid. Once you've enjoyed the smooth-as-silk taste of such creations as Supermango, Blizzard of Oz, or Peach a' Cake, you'll be eager to sample all 37 smoothie recipes in this chapter.
As you read through these recipes, you'll note that some of them call for using lowfat or fat-free ingredients. These are intended only as suggestions. Whole milk or regular yogurt works just as well if that suits your taste. If you're seeking more ways to add soybean products to your diet, try substituting tofu, soy milk, and soy yogurt for the dairy products suggested in these recipes (see chapter "Smoothie Power: Fit and Trim, Filled to the Rim" for a host of suggestions on the use of soy products).
It's summertime, and the fruit is lusciously fresh and aromatic, so grab a healthful carton of your favorite grade A and head for the blender. You're on your way to becoming a smoothie digni-dairy.
