1 In a large bowl, combine the veal, oil, lemon juice, and salt and pepper to taste. Cover and marinate at least 1 hour and up to 3 hours.
2 Place a barbecue grill or broiler rack about 5 inches from the heat source. Preheat the grill or broiler.
3 Thread the veal, onion, mushrooms, sausage, and sage leaves alternately on 8 short skewers.
4 Grill or broil the skewers, turning them frequently, for 6 minutes or until browned on all sides and the sausages are cooked through. Serve hot with lemon wedges.
