1 Snap off the stem ends of the green beans. Bring about 2 quarts of water to a boil in a large saucepan. Add the beans and salt to taste. Cook uncovered until the beans are tender, 5 to 6 minutes.
2 Rinse the beans under cold water and drain well. Pat dry.
3 In a medium bowl, combine the anchovies, garlic, parsley, mint, and salt and pepper to taste. Whisk in the oil and vinegar.
4 Toss the green beans with the dressing and serve.
