1 In a medium saucepan, stir together all of the ingredients except the tomato. Cover and cook over low heat, stirring occasionally, for 15 minutes or until the beans are tender. Add a little water if the vegetables begin to stick.
2 Stir in the tomato and cook uncovered for 5 minutes. Serve hot.
