Salmon & Dilly Cucumber Sauce

Ingredients

4 (6-ounce) salmon fillets
olive oil
lemon juice
salt and pepper to taste

Sauce:
1 cup water
1/3 cup white vinegar
1 cup sugar
1 tablespoon salt
1 cucumber , peeled and diced
1 cup sour cream
1 tablespoon fresh dill , chopped

Directions:

Brush salmon on both sides with oil and lemon juice; sprinkle with salt and pepper. Grill over hot coals for 4 to 5 minutes on each side, turning carefully, just until fish flakes easily. Serve with sauce.

Sauce:
Combine water, vinegar, sugar and salt; stir until sugar dissolves. Stir in cucumber; chill for one hour. Drain, discarding liquid; fold cucumber into sour cream. Stir in dill.

Tip: Aluminum foil is handy when grilling fish or vegetables…it keeps foods from falling into the coals. Simply lay a length of foil over the grill and spray lightly with non-stick cooking spray.
