1. Place the tahini in a small bowl and gradually stir in the water. Add the tamari, vinegar, and garlic. Whip with a fork until well blended.
2. Serve over vegetable-topped quinoa, rice, or whole-grain pasta.
Substitute sea salt to taste for the tamari, and lemon for the balsamic vinegar. The sauce will still be quite good, although the taste will not be quite as rich.
