Put pepperoni pieces in a bowl; stir in Tabasco, if desired, and 1/4 cup pizza sauce.
Cut (3-inch) rounds from each crust. Spoon about 1 teaspoon pepperoni mixture onto each round; fold each in half; seal edges with fork. Cut slit in top of each with a sharp knife. Brush each foldover with beaten egg and place on ungreased cookie sheets. Bake at 425° for 9–11 minutes or until golden brown. Serve warm appetizers with remaining warmed pizza sauce for dipping.
