Mix cream cheese and sugar with mixer; mix in whipped topping on lower speed. Spread mixture on half the cookie bottoms; top with bottoms of remaining cookies. Dip 2/3 of each cookie in chocolate. Freeze or refrigerate, covered, till chocolate is set. Thaw to serve.
Editor's Extra: To sub for chocolate, roll edges in colored sprinkles or chopped nuts.
