Swiss Green Beans

1 cup sour cream
2 tablespoons flour
1/3 cup milk
1 tablespoon green onion chopped
1/2 teaspoon salt
1/4 teaspoon sugar
1 1/2 pounds green beans whole, cooked (about 7 cups)
3/4 cup Swiss cheese shredded
8 round buttery crackers crushed
1 tablespoon butter or margarine, melted
1/2 teaspoon paprika


Preheat oven to 325°. Grease a shallow 1 1/2 -quart baking dish. In a small saucepan, mix sour cream and flour. Stirring constantly over medium heat,bring to a boil and boil for 1 minute. Remove fromheat. Stir in milk, green onion, salt and sugar set aside.

In baking dish, layer half of the beans and half of the cheese repeat layering. Top with sauce.

In a small bowl, combine crushed crackers, butter or margarine, and paprika. Sprinkle over sauce. Bake for 15 minutes or until bubbly.
