Sweet 'N' Saucy Carrots

Serves: 4

1 pound carrot sliced 1/4 inch thick (about 2 1/4 cups)
2 tablespoons butter or margarine
1 tablespoon water
1 onion small, cut in thin wedges
1/4 cup orange marmalade
1 1/2 tablespoons Dijon style mustard
1/4 teaspoon salt


Place carrots, butter or margarine and water in a 12-inch skillet. Cover and cook over medium heat for 5 minutes. Add onion and cook, covered, for 10 minutes or until vegetables are tender.

Stir in marmalade, mustard and salt. Cook, uncovered, for 5 minutes or until carrots are glazed. Sprinkle with parsley if desired.
