Refrigerate tart shell for 1 hour bake in preheated 425° F oven for 15 minutes and cool. Sauté leeks in butter until just softened, but not transparent. Cool. Beat eggs and half-and-half together add cheese, nutmeg, salt, and pepper mix well. Spread leeks on bottom of baked tart shell. Pour in egg and cream mixture and sprinkle with more nutmeg. Bake for 30 minutes in preheated 375° oven or until firm in center. Cool for 10 minutes before cutting. May be served warm or cold.
