Fresh Plum Leather Candy

2 1/2 pounds plums fresh (Italian variety), about 15 to 16
1/2 cup brown sugar firmly packed (optional, depending on natural sweetness of your plums)


Thinly slice fruit and discard pits. Turn into a large saucepan with optional sugar and bring mixture to boil over low heat, stirring until sugar is dissolved. Boil 3 minutes. Pour mixture into blender or food processor purée. The purée may be strained to remove bits of skin, but is more nutritious with skins left in mixture. Line jelly roll pan with plastic wrap and spread purée evenly over surface. Finish recipe as for Fresh Peach Leather Candy.
