Fluffy Apricot Dressing

1/2 cup water
1/3 cup dried apricot halves
1 (8-ounce) container plain yogurt
1 (3-ounce) package cream cheese cut in pieces
1/4 cup brown sugar packed
Chilled cut-up fruit
lettuce leaves


In a small saucepan over medium heat, bring water and apricots to a boil. Cover, remove from heat and let stand for 10 minutes or until apricots are soft and plump.

In a blender container, place apricots with liquid, yogurt, cream cheese and brown sugar cover. Blend at medium speed for 1 minute or until smooth and fluffy. Cover and chill.

To serve, spoon or pour over fresh fruit arranged on lettuce leaves.
