In a medium bowl, toss cucumber with salt cover and refrigerate until well chilled.
In a small bowl, combine sour cream, lemon juice, onion, sugar and white pepper blend well. Reserve 1/4 cup of the mixture for garnish. Combine cucumber with remaining sour cream mixture. Refrigerate for 2 hours or until well chilled.
To serve, arrange cucumber slices on a bed of salad greens top with reserved sour cream mixture and sprinkle with parsley,
