Charleston Breading Mix

2 cups yellow cornmeal
1 cup Parmesan cheese grated
1 cup sesame seeds toasted (about 4.4 oz.)
1/4 cup each dried parsley flakes, chives and thyme leaves, crushed
4 teaspoons each garlic powder and ground sage
1 teaspoon red bell pepper ground


In a large bowl, mix cornmeal, cheese, sesame seeds, parsley, chives, thyme, garlic powder, sage and red pepper. Store in a tightly covered jar.

Use as a breading for chops, chicken, fish, oysters or vegetables by dipping food in beaten egg and then in breading mix before frying.
