Baked Sole

Serves: 4

3/4 cup butter
1 pound sole filet
1 egg white lightly beaten
25 crackers crushed (1 1/2 cups)
Salt and pepper


Preheat oven to 400°. Place butter in a 13 x 9 x 2-inch baking dish and place in oven until butter melts and turns golden brown (do not let butter burn).

Pat fish dry with paper towels. Dip fish in egg white, then coat thoroughly with cracker crumbs. Place in browned butter in baking dish. Sprinkle with remaining cracker crumbs, salt and pepper. Bake for 15 to 18 minutes, basting every 5 minutes or until fish flakes easily with a fork. Baste fish with all remaining butter in dish and serve.
