You’ll Love This BLT Pasta Salad for Any Occasion!

I have always been such a fan of pasta salads. My mother-in-law is known for how great she is at throw-together pasta salads. I’m definitely going to have to get her to write that recipe so I can share it with you guys because it is SO easy and is so addicting to eat! I love how there can be so many ways to make a great pasta salad--it’s a great way to use up leftover chicken or shrimp and various leftover vegetables you may have. I love that it can be a main dish or a nice side dish that people in my family don’t mind having the leftovers for days when I make a big batch.


Another one of my all time favorite go-to sandwiches if I happen to have the ingredients on hand is a great classic BLT. My parents have a huge, gorgeous garden in their backyard with almost every vegetable and berry you can imagine. Our summer meals were full of fresh peppers, tomatoes, corn, lettuce, green beans, carrots, red potatoes, just to name a few. One of my very favorite meals we’d have all the time was BLT’s, or bacon, lettuce, tomato sandwiches. It is such a simple sandwich, but it’s so perfect in that simplicity.


So what happens when you combine a lovely pasta salad with BLT ingredients? You have the most perfect, easy, craveable pasta salad you could dream of. I found this great recipe for BLT pasta salad and I’m pretty convinced this is going to be my new go-to salad to bring to any potlucks, parties, or showers I may be attending for the next few months. It is such a hit for everyone who has tried it!

Like a classic BLT, it is also quite simple with rotini noodles, chopped romaine lettuce, cherry tomatoes, bacon, red onion and is covered with a lovely ranch-style dressing to cover it all that is SO good! I think that’s what really makes this so special. And also bacon. Everything is better with crispy bacon, right? This pasta salad is so delicious!

One more little tip I learned from this recipe is to really get your lettuce stay crisp and not watery or soggy, make sure you run your lettuce through a salad spinner after you rinse it well to really get all that water out. That will make your salad stay nice and crisp, just like you like it!

BLT Pasta Salad

This BLT Pasta Salad Recipe is that perfect summertime pasta salad for potlucks and barbecues! The pasta combined with juicy tomatoes, lettuce and bacon is like having a classic BLT sandwich served as a salad.

Ingredients:
6 ounces uncooked rotini pasta, about 2 cups
4 cups romaine or iceberg lettuce, rinsed, chopped and spun-dry
1 1/2 cups cherry tomatoes, halved
8 ounces bacon, baked or air-fried and chopped
1/3 cup red onions, finely chopped
1/4 cup Ranch dressing
1/4 cup sour cream
1/2 cup mayo
2 garlic cloves, minced
3 tablespoons lemon juice, freshly squeezed
1/4 teaspoon fine sea salt, or to taste
teaspoon ? ground black pepper, or to taste


Directions:
Cook pasta according to package instructions, drain the pasta and rinse under cold water, set aside to cool.

In a small bowl, combine the ingredients for the dressing and whisk until creamy.

In a large salad bowl, add the cooked pasta, chopped romaine, halved tomatoes, cooked bacon, and chopped red onion and toss.

Just before serving, add the dressing to taste and gently toss until combined.
