Salad with Buttermilk Ranch Dressing

This salad is delicious and the dressing is better than restaurant ranch!

Ingredients:
2/3 cup mayonnaise
2/3 cup buttermilk
2 tablespoons apple cider vinegar
1/2 teaspoon onion powder
2 tablespoons finely chopped fresh chives
2 tablespoons finely chopped fresh parsley
1 clove garlic, grated
kosher salt and freshly ground pepper
1 red onion, thinly sliced
1 head red leaf lettuce, torn
1 head romaine lettuce, torn
6 radishes, thinly sliced
2 carrots, grated
2 kirby cucumbers, thinly sliced
1 large green bell pepper, thinly sliced
kosher salt


Directions:
Make the dressing: Whisk the mayonnaise, buttermilk, vinegar, onion powder, chives, parsley, garlic, 1/2 teaspoon salt and a few grinds of pepper in a small bowl; set aside.

Make the salad: Put the red onion in a bowl and cover with cold water; let soak 10 minutes, then drain.

Combine the lettuce in a large bowl and add the radishes, carrots, cucumbers, bell pepper and red onion. Toss with the dressing and season with salt.
