Slow Cooker Lemon and Lime Delicious

This recipe calls for caster (castor) sugar. In the US, we don't find caster sugar, but you can make your own. The best method is to use a coffee grinder (cleaned out, of course) and process white sugar it in small batches until you have the amount called for in the recipe. You can also use a blender or food processor. Caster sugar isn't as fine as powdered sugar and it incorporates into the recipe better than white sugar.

Ingredients:

12 tablespoons (1 1/2 sticks) butter softened
1 1/2 cups caster sugar See note below
1/3 cup self-raising flour sifted
1 1/2 tablespoons lemons rind
1 1/2 tablespoons lime rinds
3 tablespoons fresh lemon juice
3 tablespoons lime juice
3 egg yolk
1 1/2 cups milk
4 egg whites

STEP 1 Beat butter and sugar until light and fluffy.

STEP 2 Mix in flour and, lemon and lime rinds and juices.

STEP 3 Combine egg yolks and milk in a separate bowl, then whisk into butter mixture.

STEP 4 Beat egg whites until they form stiff peaks, then fold into the batter. Mixture will look curdly.

STEP 5 Spoon mixture into a lightly greased, heat-proof bowl and cover with aluminum foil. (use any heat-proof bowl that will hold the mixture with room to spare at the top, and will fit in your slow cooker.

STEP 6 Pour one cup of water in the bottom of the slow cooker, add the bowl of pudding.

STEP 7 Cover and cook on Low for 5-6 hours. Your pudding will have a light cake top with a custardy base.

STEP 8 Serve with cream or ice-cream, if desired.
