Cottage Fries - Easy Oven-Fried Potato Rounds


These easy cottage fries crisp up quite nicely in the oven. They’re called cottage fries because they supposedly look like the shingled roofs on those cute little houses you see in the movies and on travel brochures.

Yield: 1-2 potatoes per person, depending on size of potato

Ingredients:

yukon or russet potato, sliced into 3/8-inch thick rounds
enough olive oil to coat
cayenne, salt, pepper, to taste
fines herbes (like Herbes de Provence), to taste

Directions:

Preheat oven to 450°. Place the sliced potatoes in a bowl of cold water to rinse the starch off. Drain well and pat dry with paper towels to dry. Drizzle olive oil over potatoes, add spices and toss to coat. Line a baking sheet with foil or silpat and arrange the potatoes without overlapping. Sprinkle a bit of salt on top, if desired. Bake uncovered for 15 minutes. Turn; bake for another 15 minutes. Turn again, and bake for 15 minutes more. Repeat as needed until potatoes are a nice golden brown. (usually by 45 minutes, they will be done.)
